This past weekend I was in Trader Joe’s, which is par for the course and I saw a new sweet potato pie & marshmallow mix in the dessert aisle. Being the sweet potato pie fan that I am, I felt compelled to buy it and try it for myself. You only need to add a few additional ingredients
Trader Joe’s Sweet Potato & Marshmallow Pixie Pie…let’s get started. First, preheat the oven to 350 degrees F.

The crust, filling, and marshmallow pouch.
Next, I added the necessary tools from my kitchen. An 8 inch round baking pan, 1 egg, 4 tbsp water, and butter.
After melting the butter and whisking it together with the crust mix, it has to be pressed into the bottom of the pan. Let the crust bake for 8 minutes.
Mix the filling together and pour over the crust when out of the oven.
Add as much or as little of the marshmallow as you like. I used about 1/3 of the pouch because it is very sweet. I like sweet but this was is on another level. If I used the entire pouch I would probably have a headache. 😕
Finally, my Jackson Pollock marshmallow design is ready for the oven! 🎨 I baked it for 28 minutes at 350 degrees.
In the end, what is the final word? Is the Trader Joe’s Sweet Potato & Marshmallow Pixie Pie a Yay or a Nah? I say YAY. It is tasty, inexpensive, and super easy to put together. Is it as good as my sweet potato pie? Let’s not get carried away! However, for almost no prep time, 36 mins total bake time and a cost of only $2.99 it’s a no-brainer for those who like sweet potato desserts or just want to try one without making the more labor intensive traditional pie.
